I love everything about the pasta bike cutter, except that there are no disks that just cut a straight line. I wish they had one for this tool.It is quite sturdy when you are cutting the pasta dough. Easy to guide and get fairly straight uniform noodles.Update:1st batch of noodles was done just using rolling pin to roll them out (softer dough). 2nd batch of noodles was done using my pasta roller machine to roll out the pasta sheet. The pasta bike came off it's roller when trying to cut out these noodles. However, I was pressing it with the handle straight up because I was having a bit of trouble cutting all the way through the dough. I put it back together and continued, this time with the pasta bike handle at more of a 45 degree angle.It did cut through the dough and I am eating the noodles as I write this. I just think it probably takes a bit of learning.Keep in mind that I am like a little kid with a new toy; I have little patience because I am so excited to play with the newest toy. I still think the pasta bike tool is great!

Perhaps a previous customer kept the instructions. Am trying to figure out how to adjust the wheels without breaking it. Nice design, comfortable handle, rolls smoothly.

You'll wonder how you ever lived without this! The bike is comfortable with one hand. The wheels glide easily and are gentle enough to use on surfaces like pastry mats & cookies sheets. This is my second one (in ~15 years) because the plastic wheels eventually wear down and do loosen - which makes straight lines require more effort. On the other hand, you get 9 wheels while paying less than for an all-metal pastry cutter that has fewer wheels, can scratch surfaces, and is bulkier to use. Makes pretty ruffled edges of pasta/ravioli, cookies, flatbread squares, crackers -- and it's a great guide for guaranteeing even bars, brownies, petit-fours, etc.

I’m not a fan of this device. I used plenty of flour but the noodles rolled up in the teeth and stayed there. You had to pick each one out individually. Might as well cut them by hand with a knife. It also did not bear much weight of pressing down. The plastic handle snapped off the roller several times as I was attempting to use it. If I hadn’t bought it so long ago then waited to use it, I’d be returning it.

I love this little helper ! I was searching for something to help me cut through dough evenly to use as lattice work in pies. Someone working at a specialty cookware store named Sur La Table told me to try The Marcato Atlas Pasta Bike. I did and was pleasantly surprised. This tool has removable wheels that let you decide how wide your strips will be. I purchased it just to make the lattice on pies, I have not tried it on anything else. Purchased this one on Amazon for a family member and it was cheaper in cost.

Can be used for cutting pasta in a wide range of widths, and is very easy to clean

I love this thing. First time I rolled out the pasta too thick and it was a disaster. Next time was just right. Cut strips and then cut across them and pinched them in the middle for farfalle. They didn't hold together as well as I hoped but that's not the fault of the bicycle, but instead of it's rider.

Purchased as a gift 🎁 that was given to a friend who truly enjoys his pasta.Seems to be very happy. Also purchased a pasta machine however that didn’t turn out so well. Can’t discuss the details till I investigate some issues. This little devise was a good purchase ...

good: it cuts the pasta in strips with a consistent width. bad: you have to press very hard to make sure the cuts are through the pasta and even then, you have to separate the strands. If you're counter is not hard and very flat, it probably would not work well. I do use it though because the pasta looks great.
