The bags are large enough to hold one large fish comfortably (e.g., one adult angelfish). Several shrimp would be fine for transport in these bags. My best estimate for volume would be ~ 1L of water, perhaps a little less. We transported our fish in these bags for ~3 hours when we moved and had zero casualties - with one large fish per bag (for reference, an adult angelfish is considered a large fish)... A bit late now, but I'll give my $0.02 anyway.

It depends on the size of the fish for sure. They should not be fed for at least 24 hours before transport (so they do not soil the water as quickly), otherwise they should be okay for up to 72 hours. The bag allows for transference of Co2 and O2, so most fish can be transported this way. PLEASE NOTE some fish such as BETTA require a surface to breathe from, and cannot breathe when indefinitely submerged - make sure to leave air in the bag for these species - otherwise it is not necessary. I commonly receive invertebrate and fish in the bags after several days in post, and they are unharmed and acclimate just fine. As long as the fish was not fed recently, the primary factor would be starvation. They don't produce much waste if they aren't eating, but they will die after just a few days with absolutely nothing to eat, and no food should be added to the transport container. Obviously the size of the fish makes a big difference though. Small fish, big bag = long transport time. Big fish, small bag = short transport time. Age is not as important as size, but juveniles are more adaptable and survive transport and acclimate with a higher success rate.

tl;dr: Do not feed 24 hours before transport. Keep transport as short as possible. 24 hours is a reasonable estimated window. 48-72 hours would be the maximum I could ever recommend, and only if it is absolutely necessary.

Im moving to Texas and will be taking all my fish with me. Would these be a safe option for me to transport them?

Yes, IMO. I brought my shrimp safely from CA to MI in these bags. They are quite large so they should fit most fish.
