It's a little more sticky than other types of fondant but you can keep it from sticking to your hands by rubbing some crisco on your hands before working with the fondant. It rolls out easily on the mat, but be warned you really need to sprinkle on the powdered sugar before you try to roll it onto your roller to put it on the cake.
