The interior is coated with a type of non-stick surface. Not sure what type. They are usually sensitive to overheating and damaging the non-stick surface. The sides are deep and it works well for lighter duty things. For long cooking etc, I would prefer a heavier iron or thick-walled aluminum dutch oven style pot. I use it to assemble sauces and light cooking. It is my secondary go-to pot for making pasta. I didn't want to spend big money for a second heavy duty pot.
