Review: Stunningly gorgeous & creative cakes at home - This cookbook is absolutely stunning and holds a huge variety of cake and frosting recipes, ranging from traditional to adventurous and exotic. Flipping through the pages, I gave up on bookmarking all the recipes I'd like to try, as at least half of these 150 cakes are now on my to-make list. The introduction section is filled with some fantastic tips and an explanation of each step in the baking/assembly process. It definitely should not be skipped. I love that Tessa walks the reader through all the different ways to decorate a cake, from super simple to complex piping and ombre. I also appreciated her explanation of the buttercream dam around cakes like the lemon layer cake - I've seen it before, but never considered how to do it in my own home. There are a few flaws that hold this cookbook back from being perfect. The largest one is the fact that the ingredients list and the instructions are almost never on pages facing one another. Instead, there is a gorgeous photo next to the ingredients list, and usually another beautiful photo next to the directions. While these photos are drool-worthy, it is really difficult/annoying to flip back and forth between pages mid-baking. That's particularly true in this case, where the publisher elected to make this hardback a board book - it does not stay open well (and half the pages were stuck together when I received it, although I think I've unstuck them all now). Also, a lot of these recipes yield 3 or 4 layer 6 -or 8-inch cakes. Those are not very typical pan sizes (in the US) - the most common here seems to be the 9-inch. This means that either you'll need to adapt the recipe for your cake pans (which is doable: google Food52's post on baking pan conversions) or you'll need to go buy around $30-120 worth of new pans (depending on your brand of choice). In the end, I do really adore this cookbook. Tessa goes beyond a standard "recipe book" here, with very precise and well-written language guiding the reader through the process of recreating her masterpieces in their own home. Whether you're new to baking or experienced, there will be plenty here to learn from and enjoy. I'm looking forward to making a lot of the whimsical cakes, like the blood orange thyme cake, the butterscotch bourbon cake, the blueberry pancake cake, and the coconut mojito cake. Also, although there are multiple recipes that require ingredients I don't usually keep around the house or require more time than I have during the week, I was able to throw together her oatmeal cookie cake tonight - it's easy to make with pantry/fridge ingredients and is absolutely delicious! ___ Edit 04.28.16. I've now made the blood orange thyme cake, the chocolate stout raspberry cake, and the birthday cake. My co-workers asked me if I was planning to enter a competition with these cakes because they taste and look so stunning. Buy this book immediately and start baking! Edit 04.03.19. I've made the oatmeal cookie cake, banana cake, chocolate cassis cake, chocolate stout cake, butterscotch bourbon cake, cinnamon roll cake, and mint mojito cake recently. Review: Cake book of the year. - Tessa Huff is a cake whisperer. Her debut book Layered: Baking, Building, and Styling Spectacular Cakes is SPECTACULAR. (Yes, I am shouting!) Tessa is the voice behind the beautiful site Style Sweet CA the content of which houses a wealth of temptation and inspiration. Somehow, I missed this book’s debut in April – I’m really slacking off. Thank goodness for my good friend, Judy, who righted my wrong and told me three or four times how much she loved the book. After the third, “Did I tell you how much I love this book?”, I ordered Layered. The moment I took it from it’s wrapping I was smitten. I’m going to order a second copy to stay pristine because this copy is going to get a work out. At first blush, I was taken in by the stunning photographs – cake is art and Tessa is an artist. Then I read the first few recipes and for a brief moment I thought, “Oh this is a lot of work.” That passed quickly, because all good things take a little effort and truth be told, Tessa’s instructions are precise, succinct and incredibly easy to follow. The book is organized with introductory chapters that focus on pantry staples and cake making and decorating techniques. She then breaks out into the categories: Sweet Staples, Classic Cakes, Chocolate Cakes, Casual Ckes, Whimsical Cakes, Adventurous Cakes and ending with Holiday Cakes. She even adds a bonus section containing Three-Tier Wedding Cake and Mix and Match suggestions. A few examples of cake creations are: Blood Orange Thyme Cake, Red Currant Chocolate Cake, Ultimate Candy Bar Cake and Banana Split Ice Cream Cake. Every cake you will immediately want to bake- and while everyone is impressed with a homemade cake – everyone will be gobsmacked by a multi-tiered, multi-component offering. For my first bake from this book, I chose the London Fog Cake – a perfect blend of flavors – a chocolate espresso cake, earl grey buttercream and a salted caramel that will rock your world. Roughly, tacking on cooling time, interruptions and life – it took a total of two and a half hours to make (remember I have a lot of interruptions – their names are Jim and Andrew.) While I was making the cake for a dinner the following day, I knew Andrew would pester me to death for a slice, so I made a cupcake version. A best defensive is a good offensive. The cupcake was shared by the three of us – Jim and I had a small bite and Andrew moaned and groaned while eating the rest. “The best cake you have ever made!” Frankly, he says that a lot – but Jim and I also agreed this time. Finally, when it was time to cut the cake - it cut beautifully and the flavors were totally spot on. I cannot wait to bake more from this cake. Any level of baker will be able to replicate the recipes in this book and the more experienced baker will enjoy the more complex flavors. This will be my go-to cake book.

This cookbook is absolutely stunning and holds a huge variety of cake and frosting recipes, ranging from traditional to adventurous and exotic.
