It is a very delicious sugar, with a light molasses flavor - a healthy substitute for store-bought brown sugar (that is only white sugar with molasses added). I use it as a replacement for brown sugar with no problems. I've also used a little in my coffee for a unique flavor. I cook with it quite often and would highly recommend it to anyone wanting raw sugar.
