Review: An excellent knife - To be clear this is a Tojiro DP Gyuto. When it arrives in its nice little gold box it says Tojiro DP, it also has it wrote on the blade, so not sure why it is not being sold as such. Now to the knife itself. As this is classed as an entry level to Japanese knifes I wasn't expecting too much. It comes in a little gold box with a thin plastic sheath, which to be honest isn't the best protection but better than nothing at all. First impression was good, the fit and finish looked ok with no obvious marks or imperfections. I was slightly surprised at how thin the blade was and how light it was, being used to heavy western style knifes. It is not a Damascus blade so it wont win any beauty contests, but looking closely at the cutting edge I was surprised to see how polished and shiny it was. As it is a Tojiro it is made from VG10 steel clad in stainless steel for protection. Having only used western knifes like Wusthof I was expecting it to be of similar sharpness, boy was I wrong. Straight out of the box it was way sharper than my Wusthof. The first time I used it I couldn't believe how easily it cuts or how little pressure was needed, now I know how the chefs on tv cut so fast and so thin. It has a European handle and so it felt comfortable in my hand straight away. I now have a second Tojiro DP (150mm petty) and these 2 knifes are my go to knifes for 95% of the time. A slight word of caution, looking on line it appears that VG10 steel can be a bit brittle and needs a bit more care than a standard kitchen knife, such as NO dishwasher, don't drop or throw the knife into a sink and clean by hand as soon as you have finished using it. Overall for the price (cheaper than a Wusthof) I would highly recommend this knife to anyone looking to make a foray into the world of Japanese knives or is looking to buy a good, sharp, sensibly priced knife.
Review: best quality/price bargain - Actually it's a Tojiro DP "cobalt alloy steel series" gyuto (F-808). It arrived in a nice golden box. Very nice knife, could be sharper (it's still sharper out of the box than a zwilling or a wüsthof). I need to sharpen it myself. But it is quite decent quality. Good balance, classic shape, very thin blade. The core is made of VG10 steel. I think you cannot find a better quality/price bargain. I'm working as a chef, and I need a knife which is durable, can be sharpen to scary sharp, has got good edge retention, and I don't mind to use it in a busy kitchen. I wouldn't use any knife at work which costs more, because though I can and I do care about my knives, people around me just dont. So, afterall this is a good knife, even for professional use.

## Questions & Answers

**Q: Dishwasher safe?**
A: You should never put quality knives in the dishwasher. The documentation that comes with the knife tells you not to do this but that's not specific to this knife. Any knife with quality steel and a sharp edge will be degraded, over time, by the heat cycles and the detergent. Knives are like the easiest things in the world to clean anyway. Wipe with sponge, wipe with towel, and you're done. Knives don't ever collect anything that is hard to get off (or if so then you're using it for something you shouldn't be).

**Q: The white square on the handle, is that a sticker? Can it be removed?**
A: Sticker that can be removed.

**Q: Is this knife made in Japan?**
A: If it was really made in Japan, then Japan may as well do a hara-kiki with this knife. Iam in the market forthe kitchen knife and in the last couple of months I tried a couple of dosen of them, openly made in China, Made in Japan and pretending to be made in Japan. Knifes, made in Japan is not advertised this way, they aren't packed in the fancy papers and false "sandal" wood boxes and they always have every bit of the surface polished, wood or metal. This is 100% false product with the false ad technic. Just check the ads by real Japanese companies like Shun, for example. The philosophy is different, ther approach is different and the knifes are different. The only thing this knife has, which makes it look like "made in Japan" is the price. By the way, there no words "made in Japan" anywhere on the package or the knife. Just send it back.

**Q: Double or Single bevel?**
A: It is a double bevel.
