I was skeptical at first because I just did not think a mix that only required adding water or stock could be anywhere near the restaurant-quality Mole's to which I am accustomed. (I am a frequenter of Rick Bayless's Frontera Grill in Chicago.) But my friend is also a connoisseur, so I decided to go with his judgment. What a great surprise! This mix really is that simple, and it really does taste good. I made my first batch, adding chicken stock. The mix thickens very quickly and is ready to heat in just a few minutes. It did not disappoint. I tried using water the second time and did not notice much difference. I am not sure I can say the resulting Mole is 100% restaurant quality, but it is darn close.
