works of art!
I'm a humble and rudimentary home cook, while my wife and daughter are pretty good and we decided to splash out on several knives for kitting-out our new kitchen, including these three from Global (we love our food and I wanted to enhance our time spent preparing it with some high quality tools). I have not yet had much time to use any of these, but they are first and foremost, works of art! Their overall shapes, handle designs and the almost weightless feel you sense from their balance make quite an impression, in particular the balancing of the largest chef's knife from the GS range. Upon testing them with some carrots, onions, potatoes etc., they are razor sharp and will make light work of the tasks I'll use them for.The only potential downside i can come up with, is that the handles and blades are not forged from a single piece of steel. They are welded together - not that you'd ever be able to tell. In theory, this might mean they'd be more susceptible to breaking at the join if dropped. Of course, the acutely angled edge might also not enjoy too many hard impacts!They will eventually require sharpening. I have bought the Minosharp sharpener, as recommended by Global, but I still expect to have to get them done on a whetstone by a pro at some point down the road - hopefully not for at least several years.Honestly, these are things of beauty. Design. Build. Feel. Function. As sad as it is, I'll likely spend as much time admiring them as I will using them!

We have at last found knives that are sharp

Superb and don't worry that they don't 'match'
As you would expect these knives are excellent quality and feel that way in use. The most versatile is the larger (original Global range) chef's knife which I find myself reaching for 80% of the time. Cuts just about everything including slicing tomatoes with ease, possibly because the blade width is narrow by European standards.The smaller but heavier feeling Sai chef knife feels better to me for cutting meat.The little Santoku knife is nice to have but as often as not I'm using it to slice lemon for drinks or that kind of thing. It has its place but I don't use it as much.Unless you have OCD, don't be put off by the fact that these knives are not from the same range. How similar do your existing, matching knives of different sizes and purposes actually feel in your hand? Also a 20cm knife from the Sai range would be quite heavy and the original Global in that size feels more versatile.Add a bread knife and narrow-bladed utility knife and probably you have all that most of us need. I picked up my Kazoku set for £140 but even at £40 more than that, remembering these will last a lifetime, they are a bargain.
