One of the best knives I've ever purchased!!! This santoku 7 inch knife is razor sharp from the start and 3 months of continuous use in a professional catering kitchen and this knife is still just at razor sharp!!!I use it for absolutely everything!! I know it's just a Santoku knife but it's my new chefs knife.While I do have a couple of "nicer" more expensive knives, like shuns, macs, and masahiro. This is my all time favorite now!The grip, feel, and balance is excellent!! It's light weight like most Japanese knives.PLEASE PLEASE PLEASE make sure you have a good quality steel "sharpening stick thingy" (FOR MOST NON KITCHEN PEOPLE) and run it through every time you use it!!!!! Like I said I work in a catering kitchen where I'm cutting stuff up all day every day and my knife still does not need to be sharpened. I run it a couple time through the steel and it's still as sharp (ok maybe just a itty bitty tiny almost none existent less sharp) as the first time I used it.This is my first Global knife and I'm hopeful they will all be just as good quality as this one and I will definitely be purchasing more of these soon!!!Click yes if this review was helpful. My Favorite Knife
As an all-purpose chef's knife, this is my favorite. Global knives are great, in general, but this one seems the one I always go to unless I need a specialty knife. Globals are lighter and better for smaller hands that good German knives, so if you're a big person, or you like a blade with heft, you might want to look at Wustoff or Henckle, but if you've held Globals and like them, you'll like this one.This is the fourth one I've bought (two I use, two have been gifts). All are still in great shape and my friends who are using them love this knife as well.New, Global knives are very, very sharp. (Even serrated ones, so be careful. Friends have cut themselves on my serrated Global because they don't expect the actual edges to be sharp, only the teeth.) A diamond steel is a great way to maintain your Globals. I've gone through a couple of Henckle steels since I started using Global knives about 12 years ago, but eventually you may need to get the wheel sharpener that Global recommends. Between the two, I've never had to have my Globals professionally sharpened and they are all as sharp as practically usable. (While you can probably shave your arm hair with them after they've been honed on the steel, that's kind of stupid test for the sharpness of a kitchen knife. Just let it be said that you can keep them sharp yourself if you pay close attention the angle Japanese knives are honed to, much shallower than European knives.) Read up on this if you are going to maintain your own knives, particularly with a diamond steel, as you use them in the opposite direction that you do a normal steel.

Great all-purpose addition to my knife block
This knife is excellent. I own both this G-48 7inch and the G-2 8inch Chef's knife, and I am surprised to say that I like this Santoku better than the G-2 (which I also love and highly recommend)! This particular knife has a heft to it which the chef's knife does not have, and I find it much more comfortable to hold. The handles feel exactly the same to me, so I think the difference comes from the shape of the blade. I also find that the Santoku has a bit more power going through hard to cut items like squashes. There are definitely things that the Chef's knife is better for, such as mincing and chopping smaller things, because the curved blade is easier to rock back and forth, so I find both to be very useful in the kitchen. I love that things do not stick to the blade of this knife as easily due to the dents in the blade, which is my main gripe with the Chef's knife.I highly recommend this knife. Even if you already own a Chef's knife or other all purpose knife, this is a stellar addition to your kitchen!

beautiful knife - extremely sharp! a dream to use
I was in the market for a 6 to 7 inch hollow ground santoku...my budget was $100 or less. I narrowed it down to 2 knives: the global and the mac. I loved both - but I liked how the global was all stainless - and i liked how it felt.I actually have the Kitchenaid Santoku - which was around $17. It cuts nicely, but the global is oh so much sharper and just feels so much better.Unlike the other reviewer, it does NOT feel slippery to me....i love the grip - i love how it feels - and it slices/chops/dieces like a DREAM.Seriously though - you have to have some respect for this knife. It is incredibly sharp so please be careful. You will wonder how long you were able to survive w/out it - and it will make chopping onions...herbs....veggies etc. seem like you are cutting into butter. It is just so smooth and it is a complete joy to use this knife. i LOVE this knife.

Disappointed but I Love It Anyway
I've had this knife for about a year and I am satisfied with it. The balance of the knife in my small hand is ideal, it is easy to grip, and the one-piece construction makes it easy to clean thoroughly. I even put it in the dishwasher without ill effect. The edge right out of the box was phenomenally sharp--I'll leave the gory descriptions to other reviewers--but it is a bit disappointing that I have not been able to re-hone the edge to that level of sharpness even with the recommended sharpener, which I also purchased. Food sticks to this hollow-ground knife just as much as it stuck to my old Henkels chef's knife. Overall, I would say that this is a good knife that is easy to use and clean with above average performance.

Excellent chef's nice
Excellent chef's nice, its the only knife I really use now. Bought one for my parents and the love it as well. This one knife will replace 90% of your kitchen knives. Will definitely recommend this product.

Out of the Box super scharf
Mein erstes japanisches Kochmesser. Was soll ich sagen.... Das Messer spricht für sich selbst.Ausgepackt, kurz abgespült und dann begann das Glücksgefühl beim schneiden vom Gemüse.So was hatte ich noch nie. Das Messer wurde sowas von scharf geliefert, es fällt quasi von selbst durch das Schnittgut. Es liegt durch den perfekten Schwerpunkt sehr gut in der Hand und ermüdet viel viel weniger als alle meine anderen Messer.

équilibré et de qualité.
la lame est dure, mais il est possible qu'un réaffutage régulier soit nécessaire. le couteau est bien équilibré et assez grand. il est préférable de bien prendre les dimensions avant l'achat. il ne se range pas dans un simple tiroir à couverts.
