Friendship Dairies originated over 95 years ago in the small town of Friendship, located in upstate NY, where its founder first crafted an old world-style cheese called farmer cheese. In Poland, this type of cheese is known as White Cheese, Twarog or Bialy Ser and is commonly used as a filling for blintzes. In its early days of production, this all-natural cheese was produced all week long then transported by railway to be sold on the streets of New York City.Today the hands-on approach and old-world flavor are the same. Friendship farmer cheese is made by pressing the curd until almost all of the liquid is eliminated. It has a mild taste and moist texture, and yet is dry enough to be sliced. And if you have an aversion to lactose, it only has 0.5% per serving, so it’s a nice way to enjoy dairy when you’re on a restricted diet. All-natural and low in fat, it makes a great substitute for ricotta cheese, or try it in blintzes and salads.Made from pasteurized, skimmed cow's milk.

**Q: How could it have zero calcium if it was made from milk?**
A: who believes that?  It says no gluten.

**Q: Can these be frozen and for how long?**
A: YES!  I have had it frozen for 2 months and it tastes like it does when fresh.  I believe it says on the packaging that it can be frozen.

**Q: If it is for 3 lb, why is it so expensive?  Lifeway cost $5 per 1 lb pack...**

**Q: Why price is so ridiculously high???? That's insane**
A: I think that the price may be so high because it is so hard to find! I live in California and can't find this cheese anywhere. This kind of Farmers Cheese is recommended for certain medicinal diets that allow no sugar at all (and all milk products have some natural sugar in them). Also, some recipes for European pastries that have a filling require this kind of cheese to make the pastry authentic. The cheese arrives in cold packs for shipping and shipping costs may be part of the price. I buy the largest amount and then freeze it and thaw only what I need. If you need this kind of cheese, there is no replacement for it either in cooking or baking.  You can probably find it on the East Coast if you are close to it, but here in the West, the closest availability is in the Mid-West.
