## Description

Used by home cooks, jam makers, pastry chefs and modernist chefs, pectin is the gelling agent of choice for jams, marmalades, other preserves and fruit candies like pate de fruits. It’s often extracted from citrus fruit or apples. Low methoxy pectin is processed differently than typical pectin, and is less dependent on sugar or acid content. As a result it can be used as a substitute for plain pectin to allow new versions of preserves & sweets that are less sweet. It gels in the presence of calcium (most fruit juices naturally contain enough).
