## Description

Produced from the endosperm of the locust bean (which in the past was toasted to produce carob), locust bean gum is prized by modernist/molecular gastronomy chefs for its synergistic properties when combined with other gelling agents or thickeners. Locust bean gum combined with xanthan gum produces elastic gels. Mixed with agar agar or kappa carrageenan it produces stronger gels than either would produce on its own. Locust bean gum can also be used as a thickener, but is less potent than guar gum, xanthan gum, etc.
