Review: Flawless knife; it’s a no brainer. - I absolutely love this knife. It feels great in the hand; has a little weight, durable, perfect size, razor sharp, and seems to glide with ease when cutting stuff up. I bought the Nakiri version because I loved this knife so much, which led to buying the shun classic cleaver. Highly recommend. My Shun knives are just so much better than my Miyabi knives (going to sell those for more Shuns). They are sharper, hold an edge longer, they aren’t flimsy, and have a more comfortable hand feel. Best knives I’ve ever owned.
Review: Overall a very solid choice - Right out of the box i was a bit skeptical about the shape of the handle but in hand it is very balanced and comfortable. Comes pretty sharp out of the box hopefully holds its edge as well as my other Japanese knives. Love the look of the blade and just the knife over all. Very easy to use and rocks very well i would recommend especially for the price! Haven’t had a problem with a shun yet. (Still love my global to death)

## Questions & Answers

**Q: What makes Shun worth the upgrade?**
A: Shun knives are handcrafted in Japan with premium steel such as VG-MAX. Extra sharp out of the box, they stay sharp longer and deliver unmatched precision. Shun knives are more than a tool, they’re a lifelong cooking experience.

**Q: How should I care for my Shun knife?**
A: Always hand wash with mild soap and dry immediately. Never put your Shun knife in the dishwasher. Use a soft wood cutting board like Hinoki to protect your knife edge when cutting. Do not use Shun for chopping through bone or frozen ingredients.

**Q: What is the proper cutting technique for a Shun?**
A: Use a locomotive motion when cutting - move the blade forward or back instead of pressing straight down. This lets the blade do the work, reduces fatigue, and helps keep your Shun in top condition.

**Q: How often should I sharpen my knife?**
A: Notice your Shun losing its edge? Hone weekly to re-align the blade. If honing no longer works, send it in for free sharpening or follow our online tutorials to hone and sharpen at home.

**Q: What’s the correct way to pronounce Shun?**
A: Say 'Shoon' (rhymes with moon). Shun is the Japanese concept of enjoying food at its peak. We honor this tradition by crafting fine cutlery that’s always at the peak of its perfection.

### ⭐⭐⭐⭐⭐ Great first "real" chef's knife
*by G***E on April 7, 2016*

This Shun Chef's Knife is my first "real" knife, purchased to replace a chef's knife that came in a $20 set from Costco that I had to use an electric sharpener on every 3 days. So if you are a knife connoisseur, this may not be useful information. But for me, this knife is great. I tried holding a similar Shun, from their Classic line, in a Williams-Sonoma a few weeks ago, and I thought it was pretty solid and comfortable, so I ordered this Kanso on Amazon, which I think is much better stylistically than the Classic ( Shun DM0706 Classic 8-Inch Chef's Knife ) because the Classic's handle looked a little plasticy to me in person. Upon getting it from Amazon, I was not disappointed. The knife is balanced to the middle, so it doesn't kick backwards when you hold it like a Wusthof will. It has a little heft to it, but not so much that you get tired using it. The rocking motion is stellar - I'm honestly shocked how easy it is to cut through basically anything, and how much faster I can chop with it than I could with my old cheap (lighter) set. And even freshly sharpened, my old set did not come anywhere close to this. The only thing I was surprised about was that the handle looks more "rustic" than I'd expected. I like the wood grain look, but I think the wood is a little lighter colored in real life (or at least mine was). In any case, it puts the remainder of my cheap set on the knife magnet (paring, bread, fillet, etc) to shame. I'm thinking about expanding my line to include the other Kansos, and I will review them too if I get them, but they are a bit pricey. Maybe one day...
