What are the reasons or adventages of the granton edge blades?

Moist foods can stick when they're sliced, if they are thin or light enough that their weight doesn't pull them off with gravity. The uneven surface of a Granton edge (a misnomer, since it affects the faces of the blade, and not the edge!) helps by reducing how much of the blade they can touch, and prevents that suction-cup-like effect for all but the very thinnest or lightest of slices.

Is this any different to the non-granton edge other then the obvious?

Other than the addition of the kullens on the blade there is no other difference.

Are the scallops alternating in either side? Doing so will give the blade more strength and stability.

The knife is very strong and stable, the scallops will not affect this chef knife.

The 8 inch short bolster grantont edge forged chefs knife . The knife looks thin does it break if applied on heavy duty like bones ?

I havent had any issues. It’s not flimsy at all. I use it to break down whole chickens some times if i am not using my boning/filet knife and it holds up great. Honestly its my favorite knife, its starting to become the only knife I use and i have 2 knife bags of german and japaneese knives. Im also a fan of their slicer as well.
