Now here is the real, and complete, thing! A cook who wants to engage in the cuisine and culture of the chile (or chili) pepper needs only this cook book and does not even have to be greatly experienced. In fact, a quick flip through the book reveals a wide variety of familiar dishes. You can surprise your family with iceberg lettuce salad, chicken soup and mashed potatoes--all with that unexpected distinctive touch of chile. There are, in fact, well-known dishes that can be given that special chile twist as well as all of those new and exotic opportunities to play with the official vegetable (actually a fruit) of New Mexico. In addition, a particular strength of this big tome (391 pages) is the numerous sections in Chapter 12's Glossary Of The Chile Cuisine and Chapter 13's Reference Guide which covers a plethora of topics such as a Guide To Chile Peppers by Scoville Heat Units, Awesme Health Benefits of Chili Peppers and The Chemistry of Slow Cooking Meat. These sections are entertaining and educational if just read, but can make a great deal of difference in the success of chile cooking if used in tandem with the easy to follow recipes.

The Red and Green Chile Bible is more than a cookbook, it actually instructs you on how to prepare and cook both red and green chile for all of the recipes in the book. I have found the organization of the book with essential recipes in the front of the book with the simple instructions on how to prepare the ingredients extremely infomative. The structure of Red or Green Chile Bible cookbook is the most comprehensive and well researched chile cookbook that I have ever purchased.This is a must for all chile lovers.

Not for me.
I was very disappointed with this cookbook. The author hasnot spent that much time in the kitchen. His recipes make a simplecuisine very complex. The instructions are very hard to follow and sometimes call for you to refer to as many as three other pages in the book to complete your preparation. Not for the average cook who wants clear simple instructions.
