Is this good for any or all of the p365 magazine sizes?

The smaller magazines tend to be difficult to retrieve in that they drop below the top of the pouch. My P320 12 round magazines are flush with the top and would be difficult to retrieve rapidly in a self defense situation. However, these are high quality pouches and work extremely well for larger magazines.

Will this fit a Ruger EC9s , 9 mags and the 7 round mags ?

It is a universal magazine pouch. I can fit my 8 round .45 ACP, 1911 magazine just fine and there is enough protruding that I can easily grab it. I believe your mags would fit fine.

I wanted a magazine carrier that would function as well with a single stack 45 magazine as it would with a double stack Glock magazine, is it ok?

I have 17rnd g19x mags in mine As well as single stack 9. Fits better with double stack but will be fine
