Amazing!!
first of all - the seller: I have never had such great service from any other company on eBay. From the shipping, packaging and personal follow up to being sent a little gift for making the purchase, it had been the best ever.I did a review just after the knives arrived and I must say more now that I have used them quite a bit. I am using them unhoned, right out of the box and they are so sharp that it will be awhile before sharpening is needed. These knives are all business and you need to learn to watch your fingers. Learn "the claw" when chopping and don't count on the blade bouncing off your fingernails if you are imprecise. You will be looking for your nail! They are works of art that make cutting an art. The handles are lovely and well made and the entire knife balances in your hand extremely well. Chopping vegies is actually fun. Slicing - well I have never had more fun slicing thin delicate slices of Ahi tuna. I could go on and on but the bottom line is this: Using them is pure pleasure and they are worth much more than what is charged. If you take care of these babies they will outlast you no matter how young you are. I no longer miss the high end German knives I once had. I will be adding a couple more in the months to come. If you have these two plus the vegetable chopper and a longer slicer you have all you need to accomplish anything in your kitchen.Life is too short to use any other than a Yoshihiro blade!!

VG10 Thin, Sharp and beautiful for the price.
Finished quite well. I have other Yoshihiro hut wanted something in a stainless that I would not care if other used. My carbon steel knifes are just for me to use and care for. These are great for the western style handle users. You should feel confident with these. I bought a blue steel kitsukiri from them that I didnt feel met the quality I expected. They worked with me to resolve the issue. So support is good from this company. The more money on a knife you spend the more I feel you need to be in their shop. I feel this company easily is a solid choice for Japanese knifes as there are so many knife makers.My advice pick your purpose, That picks your knife styles. Pick your steel, understanding harder is not always better and carbon steel IS more work,

SHARP!
These are sharp in 2 ways, appearance and performance. What a wonderful pair of knives, I filleted some salmon first thing and it was like using a razor with a handle. The control and precision I was able to use with these knives is quite amazing. They stand up for all I've read and seen about Japanese cutlery and until you actually use them yourself, then you can appreciate them that much more. The handles set comfortably in you fingers and palm and allow you to become apart of the knife.

The beauty of the Damascus stainless steel meets Japanese blacksmith
OMG, the blades are awesome and handsomely made and sharpened. The grip is also handsomely made, but it needs a little care before used by us, the consumers. The blades are sharp. But as Japanese kitchen knives, they are a little heavier and is not well balanced. The blades are a little longer and needs to get used to using them.

These knives are simply beautiful. I decided to upgrade from some low end J.A. Henckels I had been using for years. I have never cut with knives so sharp and now look forward to food prep. The factory blades slice through paper effortlessly as my husband so enthusiastically demonstrated. He especially loves the damascus steel design -- they are truly a work of art.
