will the bracket hold a Nikon SB700

Kimberly you need to have a cold shoe, a spigot and an umbrella bracket- bought individually to mount on a stand or just buy one of these combo's in order to properly mount your flash- I always put a little tape inside the cold shoe to protect the electronic contacts of the flash-Have fun- hope this helps-http://www.amazon.com/Impact-Umbrella-Bracket-Adjustable-Shoe/dp/B0055P53C0/ref=sr_1_10?ie=UTF8&qid=1448052006&sr=8-10&keywords=umbrella+bracket+photography

Out of the box. Do you have everything you need to attach a flash and shoot?

No..... it is just the "umbrella" and the velcro material to go on to it to diffuse light.... You will need a shoe mount of some sort. I have this and it works fine https://www.amazon.com/gp/product/B004YNEDHK/ref=oh_aui_detailpage_o00_s01?ie=UTF8&psc=1

What is the grid for this softbox?

There is no grid to buy separate that I know of. Look into the kit that comes with one.

would this work inside a gymnasium taking prom portraits?

Yes the light is a little sharp because of the 32 inches the larger softboxes would give you a softer light
