does it need to be stretched?

I like it better stretched. As it is only 140 lb, I think it does better when stretched.

I love fabriano paper but i find that my art photographs are not white but off-white. is white not white? what can i do?

Most traditional "white" watercolor paper is an off white shade. You can look for special white papers that do have more true white shade, such as; Fabriano Artistico Extra White Watercolor Paper and Arches Bright White Aquarelle Watercolour Paper . These are also sold online at other specific art supply sites. Don't know if these are sold on Amazon, but you can check.

is the sizing plant based or animal based?

Paper is 25% cotton and I believe the other 75% is some sort of tree pulp. All plant based materials. This is more of an introductory level of paper. Higher quality is usually 100% cotton. Not sure what you mean by is “sizing” plant based?
