Can these be wired to plug into the wall with an on/off switch?

Yes, it can be done. Plenty of store bought LED light fixtures do just this. You'll need an LED driver capable of converting 120v AC current from the wall to 12v DC current. You can use something like a 12v power supply, some of which can be wired up directly to your standard fixture wires. Just make sure the power supply can provide enough current. These LEDs state they draw 20mA, so it would take 2 Amps to power 100 of these LEDs. Also keep in mind you won't want to be running the power supply at full capacity, or you'd run the risk of it burning out.

Is there a limit to how many lights you can string together on a single 12V battery?

The LED's are 20 mA each so 50 would draw 1 amp. It would depend on the current your battery can produce. The more LED's the less time the battery would last.

Can I wire this to the accessory connection on an electric train transformer?

My grandson hat 2 model train transformers that go to 17 volts. Yes they work and are a little brighter than on 12 volts.

What is the viewing angle

I haven't measured them but they are not wide, I would say 15 to 20 degrees at max brightness. It fades fast beyond that.
