I am considering this for a stocking stuff for my 36 yr old husband. Would it at least give him a challenge?

Yes! I'm over 40 & really enjoyed playing with this so much that my 10 & 8 yr old were asking if I was done yet.

are these magnets? how do they stay together?

No they are not magnets. Each colored piece is a single piece. Each color is a different shape. The case has a side that is a grid of holes that the pieces lay into to stay together. This is an EXCELLENT logic game for children and adults.

Do pieces they stick together?

I'm not sure what you mean by this. The puzzle consists of Tetris like pieces. They are not magnetic.

Can you still do the puzzle if some of the pieces are lost? Those little balls look like they would be easy to lose.

Each piece consists of balls of the same color - they are all "glued" together, not a whole bunch of individual balls rolling around. I wouldn't worry about losing them as you can't close the lid without all of them being in place, although if you lost more than one piece it would be too difficult to complete the puzzle.
