Sunlight by Haystack Mountain Goat Dairy is a truly artisan cheese, and a perfect example of how far American cheeses have come over the last two decades. Sunlight is a washed-rind, semi-hard raw-milk cheese that's aged on the farm for 60 days. Despite the bold aroma, it has a mildly piquant, somewhat sweet flavor. Haystack Mountain Dairy, a goat farm and creamery located on seven acres of the rich agricultural plain that skirts the foothills of the Rocky Mountains northeast of Boulder is a farmstead dairy comprised of dedicated people and a healthy herd of Nubian, Saanen, Alpine, Oberhasli, and La Mancha goats. The mix of milk from all of these goats produces delicious cheeses. Made from unpasteurized goat's milk.Photo depicts whole 4 lb. form of cheese. We cut and wrap this item by hand.
