Better choice for Diabetics/Hypoglycemics
Discovered DeBoles Jerusalem Artichoke pasta 10 years ago when looking for a healthier pasta for my brother who had been diagnosed as hypoglycemic. Fast forward 5 years- to pinch pennies, I started buying whatever was on sale and had a coupon. Last year my local market introduced this as a 'new' product and I decided to splurge on a box. No going back.This product cooks up quickly and is great the next day and the next. It holds its texture and taste.The Jerusalem Artichoke is actually a species of sunflower native to Eastern North America(Helianthus tuberosus). The artichoke is the tuberous root which contains about 10% protein and no oil. Jerusalem artichoke tubers resemble potatoes except the carbohydrates composing 75 to 80% of the tubers are in the form of inulin rather than starch. Inulin breaks down into fructose during storage.Jerusalem artichokes have also been promoted as a healthy choice for diabetics. The reason for this being fructose is better tolerated by people that are diabetic and will not cause the insulin spike caused by other startches.Personally, I just like the taste and texture and the thought of supporting American farmers.

Great Taste But Hot Mess
We can tolerate some gluten in the form of wheat containing pastas and bread, but prefer DeBoles artichoke and wheat flour pastas for less bloat and overall taste. The vermicelli and elbow kind are just super, but the Angel Hair kind ends up gummy more often than not. DH is a former professional cook and we both love our noodles al dente, so that is not an issue. One way this turns out just right?My Dad's Simple Zuppa:Per person, combine 1/2 to 1 ounce of angel hair pasta, uncooked, in 12 ounce mug or soup bowl with a few shakes of Parmesan cheese and 1 Cup of very hot chicken (or vegetable) broth. Stir 1 minute, cool slightly and enjoy.

NOT WHEAT FREE! NOT GLUTEN FREE! Description is FALSE!
Food items are non-returnable and there is no picture of the back of the box. So, you do not know until it arrives (and is too late) that it is neither wheat nor gluten free - the 1st ingredient is Durham Wheat! Nowhere on the box does it claim to be wheat or gluten free; that is a huge mistake on Amazon's part. It takes like regular pasta because it is regular pasta with some artichoke added.NOT WHEAT FREE - #1 INGREDIENT IS DURHAM WHEATNOT GLUTEN FREE - #1 INGREDIENT IS DURHAM WHEATNOT MADE FROM ARTICHOKE INSTEAD OF WHEAT - #1 INGREDIENT IS DURHAM WHEATAnd, remember, once you have purchased it, you are stuck with it. Hopefully, you don't have a horrific reaction like I did!!!!! Amazon, I have called to request this be corrected and it is still WRONG and DANGEROUS!!!!

Been eating this pasta for years. Better for you and much better less starchy taste.

Main ingredient is wheat
I'm trying to decrease my wheat intake by using products that have a lower glycemic index. I thought that this product would be a good substitute for standard pasta. It ends up it's not that different and a lot more expensive. The flavor is ok and the texture is fine, but I could say the same most semolina pasta. Save your money.

This Pasta Queen Loves It!
I was watching Dr. Oz on TV and saw that a person who loves pasta didn't want to give it up in order to loose weight. Dr. Oz said that his family eats Artichoke Pasta and he thinks is a great alternative to regular Semolina pasta. The woman who loves eating pasta said that it was very good and that she would start eating the Artichoke pasta instead of the Semolina pasta due to the nutritional value of the Artichoke pasta. I have to agree that I could NOT taste a difference! This review is coming from and Italian woman. I have been eating pasta since before I could talk so I am not pulling your leg that this stuff is good. It is expensive so I will use it as much as I can afford to but if you want a great alternative to regular Semolina pasta that you and your family will like, buy some Artichoke Pasta! I think you will be surprised at how it taste nearly identical to your regular store bought pasta but with much more nutritional value.

Great for diabetics
I heard about Jerusalem artichoke flour pasta on the Dr. Oz show and was really excited. I am a type-2 diabetic who loves pasta but can't eat a large serving of regular pasta without my blood sugar going sky high. So I bought a box and gave it a try. With this pasta I can eat a large serving and my blood sugar stays much lower. Furthermore, it has a great taste, just like regular pasta. It is the only pasta I will be eating from this point forward. I just received a 12-pack of it today. I highly recommend this pasta even if you are not a diabetic. Enjoy!
