Can you use this in a regular ink jet printer?

Yes. I have gotten very good results using my inkjet printer.

How many sheets are included and what size?

It says and I quote "Silhouette Printable White Sticker Paper, 8.5"X11", 8 Count " EIGHT COUNT" , that means eight sheets total.

Is this repositionable, like the more expensive "Project Sticker Paper" listed by avery? would it work as a type of "resist" for crafts?

I use the white sticker paper often and love it but it's not repositionable. You can peal it off but it rolls up, becomes a little crinkly and doesn't lay flat as it did the first time

is it glossy? or has a regular paper texture?

It is not Glossy at all. It has the feel of a good quality Printer label.
