Can I make Cavatelli with this machine?

No, when it comes out of the box, you can make different widths of spaghetti or lasagna noodles. I don't know if there's an attachment for cavatelli. I know there is an attachment for ravioli. Hope this helps...

How do you clean this properly?

Just wipe it off with a paper towel. From what I have read about it don't get it wet. I've used mine quite a few times and cleaning it with a towel works fine

Can I use this for fondant?

I believe you can. I read in one of the cake decorating books that pasta machines can be used for fondant rolling. My only concern would be cleaning the rollers. I believe the answer can be found in the manual. I am trying to decide whether I should use my pasta machine for marzipan or fondant rolling or I should use a rolling pin. I love to make home made pasta and I do not want it to be sweet.
