It's not the sewing so much as sewing needle you would need a ball point for stretch materials

Q: Do you sew on as is or fold in half lentghwise?

I would not fold in half. I you have ever examined the collar on a knit shirt, this is exactly what it is. If you find it too wide, I would recommend cutting from the unfinished selvage to decrease the width. It will be too thick and the stretch will not function properly if you fold in half lengthwise.
