Will this hold iPad that has a holder/case? I don’t want to have to take that off everytime.

Yes it holds iPads and iPhones. Depending on the size of the case it may not work. There are two thicknesses on the device to choose from.

How thick is the notch? What device thickness will it support?

One notch is 9mm, and the other is 11mm. If the thickness of your device is less than 11mm, then it should be able to slide into one of those notches.

Can this hold an 12.9 ipad?

This product which was primarily designed for Cell Phones, is only 3” wide and may not support a 13” ipad. You can try it and return it if it does not suit your need.
