Yoshihiro Japanese High Carbon White Steel #2 Nashiji Gyuto Chefs Knife with Cocobolo Wood Handle (8.25'' (210mm))

The first time I saw this knife it caught my attention. The shape, the lovely handle, and the nice wavy damascus pattern all look amazing in the photographs. It looks even nicer in person. The way the damascus catches the light is stunning. The knife came shaving sharp and easily sliced through phone book paper with no tearing. The knife is incredibly light and the handle has a good feel. The Kiritsuke knife shape is a pleasure to use. It does exceedingly well slicing and chopping vegetables. It also slices and carves meat quite nicely as well. It also fillets fish better than some of my mid range fillet knives not as well as some of my nicer ones though. This is a great all-rounder This was my first Yoshihiro knife but it will not be my last.

Clearly hand sharpened, this knife is awesome. Beautiful in every way and sharp as I wanted. This knife has a great handle, a pretty look, a comfy grip, and a user friendly feel to it. If you have a desire to cut some food into bits and a bit of spare dough then you should seriously consider this knife.I am a professional cook and have moved my home knives to work just so I could work with this bad boy at home.Tried a Shun and was not happy with the edge. I returned it and opted for an attempt here.I love and recommend this knife.
