NA-0100 Goken New Medium Whetstone for Professionals #1000 8.3 x 2.8 x 0.6 inches (210 x 70 x 15 mm)

This stone is a smaller version of the Chosera. It cuts at a medium speed(IMO) and leaves a very polished finish for a 1k. It will load slightly over time, but it dishes very slowly. You can easily finish on this stone and have a superb edge. I imagine this stone will last me forever. Also, these Gouken Arata stones are much easier to store and move around being thinner and not having the bulky base attached. I love them

Awesome stone, this is my first naniwa stone and I can see now why the make a big deal out of it. Cuts fast, dosen't load up and leaves a good edge on the knife. The stone is supposed to be a wet and go stone, but it needs a quick 1min soak in water,but no big deal still a Awesome stone.

This is my favorite stone. It’s a bit thinner than I’d expected and hoped for but the case it comes with is great for storage. The original Chosera 1000 is my Japanese knife store’s stone of choice. He uses just this stone and a single natural stone to finish on. He doesn’t use any other grits and suggests that they aren’t needed. Recently I’ve been trying just this stone and a leather strop and the results are great. I get hair shaving sharp almost every time. The secret is really more in the technique and not number of stones you use, so don’t go crazy guys. I also use an Atoma 400 diamond stone as a flattening stone. Works great with this one.

These are the same stones. Appears 100% authentic. Feedback is identical. Size and features are identical. The only difference is the box, and the chosera had a base. Shipped no problem, but can definitely use better padding. These ARE splash and go. Even shapton stones absorb some water. You would never see a bead on a soaking stone. The main thing to consider this stone is slightly less than half the size. Meaning double the price and ask if it's a better deal than the chosera.

This is very nice and I am enjoying it. It makes a nice surry and I like that.

I was happy that my order arrived a week early but disappointed to see that it came damaged. one side of the case was completely busted off with a crack down the spine and the corner of the stone was chipped off. I don't know if I should try and get it replaced or not. Since it's a Christmas present I wont know how well it works for another week. I guess I'll update my review after I've used it.

These stone are great stones, the three stones all had broken cases when they arrived. I believe the shipping and handling was poorly executed. Maybe it was Amazon delivery????

The product I received is not a splash n go at all. It is a soaking stone and kept soaking water for over 15 min. And just to make sure I let it dry and tried again and it still soaked up water like crazy. Very disappointed as I've always heard such great things about the Naniwa pro stones and thought this was a slimmer version of it. The stone is also quite soft and not hard like you would expect from a splash n go. I guess I'll have to stick to my Shaptons which are genuine splash and go stones. I don't recommend this product as it is advertised. Fine if you are looking for a soaking stone.

The plastic case to protect the stone was broken and there’s a small chip in the stone but all in all it is good as what you expected from the brand! Thank you

#400未満の砥石で研いでいって、ちゃんと研げているのか確認をするための砥石で、これ以上の砥石を私は知りません。 ビトリファイドの荒中砥って結構泥が出るものが多く、良い感じに研げているように見えてしまいますが、この剛研 新#400で一度検査してみると、エクボやら何やらが見えてきます。 最初はどこで使ったものか迷いましたが現在はこれ無しにはちょっと怖いですね。 逆にこの砥石では良い感じに誤魔化せないのがネックだとも言えるかも知れません。 1枚目は#220剛研荒武者→#150ニュー大村砥(荒武者よりこっちの方が仕上げ寄りの研ぎ目になるから不思議)→#400剛研新で当てた時の切刃。まだエクボが広いですね。 2枚目は1枚目と同様のローテーションでもう一巡回した切刃。さっきよりもエクボが狭くなってます。 3枚目はその後今西製砥WZ#400を当てて、少し残ったエクボを一回見えなくしました。また次回切刃の平面を作ります。 4枚目は比較として、1枚目より前の状態です。

この砥石一つあれば、料理が100倍楽しくなります。 １カ月に１回。20分だけ。 それだけで、日々の料理が楽しくなる。 包丁研ぎ初心者でも使いやすいです！

非常に研ぎ易く包丁を少し研ぐと包丁のコンディションが分かり易く重宝しています。
