A simple thermostat with an off option
It turns out my other fancy new thermostat didn't have an "off" setting. This was going in an RV, and once it was winterized, there was no need to run the heat. But the thermostat I'd bought didn't allow a setting below 50 degrees F. I was surprised to find this is fairly common. It took some searching to come up with one which actually had an "off" setting, and wasn't too expensive or have features I didn't need.

Perfect fit
Fit exactly the same size on the wall as the old mercury switch-type thermostat that had been painted around years ago. Works great too so was really happy the job was easy to do.
