Potassium bromate causes cancer. i tried to return within 30 days of purchase and that is not an option! what temp and how long to bake to make safe?

How glib and silly to say that that chemical, "only causes cancer in Californians." The rest of the world knows something that our 'bow to corporations' government wants to ignore. The facts being these, potassium bromate has a 'potential' to be hazardous to human health. Yes, that potential may be small, however, what's the point of using potassium bromate in flour and pre-made baked goods? Nothing. Potassium bromate is used as a "rising agent". It helps dough to rise. Well, that's exactly what natural bread yeast does. So, there is no point in using potassium bromate, except that perhaps a company can use less yeast, or get a quicker rise, and save a fraction of a cent. Sure, companies have a right to make a profit. However, if those companies choose to slightly increase profit by using chemicals that have greater potential health risks, then consumers will eventually drive them out of the market. There are many flours available in the US that are not bleached and not bromated. Use those.

Is this flour good for bread machines

Yes, I’ve tried with my Zojirushi bread machine (Virtuoso). The bread came out great.

I left a response of “I don’t know the answer.” But I looked up 00 flour. It’s milled in Italy and has a lower gluten, so as Millard’s is high gluten, it must not be 00.

Is it good to make churros?

Churros are normally made with all-purpose flour. I haven't tried it with bread flour but, churros are a dough pastry. The main difference between bread flour and all-purpose flour is a matter of protein. Bread flour, has a higher protein content than all-purpose, usually 11-13%. It's called “bread flour” because most bread requires higher amounts of protein to produce lots of gluten.
