Mine doesn't seem to cut all the way through and I have to pull each stand apart. Is this unit defective, or am I doing something wrong?

If your talking about the spaghetti cutter I have same issue but I believe pulling each strand into two pieces is the angel hair pasta. Mine does cut and leaves a line down the middle. This is why I say tearing apart is angel hair pasta.

Why does this machine come with no instructions? I am brand new to this and do not even know what a couple of the pieces are.

Yes I know they don't tell you anything about the pieces and how to use them. It's just trial and error. There was nothing online either.

How is it possible that I willnot be able to wash this Machine? Does it means I pay $ 69.99 for a disposable machine?

All you use it for is dough, so I got a pastry brush to clean out the small spaces, & I admit I do take a damp cloth & wipe it down. I think it will rust will washing. The ravioli attachment didn't work very well, no filling got in! But the rest of it is wonderful!I've had pasta making parties! We love the machine1

Is it possible to use this to just roll out plain thin dough, like for making wonton wrappers?

You can use it to roll out any dough as long as your dough is not sticky
