Q: Why are the usb 2.0 header cables for the TF2 pinned incorrectly to where they can't be used in a standard usb 2.0 header on the motherboard?

Hello, the cable that connects to the TF2 is NOT to be used with a USB 2.0 header, this is not the correct connection and is pinned this way to avoid damage by connecting it incorrectly. Please read the manual for instructions and connect the cable to the controller that was included with the package.

Q: I plan on using this on the cooling system of my cnc machine. what type of power source is required for this?

Has a fan connector on it, i put a fan to molex adapter on it and plugged it into a pc power supply.

Q: Is there a way to display only temp and not both? I plan to buy 2 devices to see my delta but I don not need to see flow twice in both devices.

Unfortunately not. I have two installed for the same reason you stated; one indicates the temperature leaving the pump and the other shows the temperature entering the final radiator. Surprisingly, the temps are just within a few degrees of each other. As for the flow meters, ignore them. They are, in my experience, quite useless. I reviewed the units a while back and only gave them 3 stars because of the wild variation in the flow readings (as much as 40LPH). The temps however seem to be spot on. I opened the windows in my office on a cold night and got the readings down to 12C and 15C respectively, and the temps on my GPU and CPU never got above 19C. Crazy good for a gaming rig. For the record, my rig: Asus ROG X570 AMD Ryzen 7 5800X nVidia RTX 2080ti FTW3 Crucial Ballistic RAM 32GB EK water blocks on CPU and GPU as well as EK radiators and D5 pump FLOW: Pump>TF2>GPU>240mm Rad>CPU>TF2>360mm Rad>Pump Hope that helps.
