I was a bit skeptical as I have purchased the blueberry muffin mix from This brand and was not super impressed but I really wanted a lemon cake on keto so I gave this a try. I love it!!! I followed instructions exactly and baked in a 8x8 metal pan. Not only is is delicious it is super moist and it does not dry out the next day. I ate on this cake for 5 days and it stayed moist and delicious the whole time. I did end up making a keto cream cheese frosting with lemon juice and zest in it which added to the lemon flavor but even without the icing this cake is a win. The $10 price point seems a bit steep but when you think of the cost of keto ingredients like almond flour and tapioca and etc to make desserts from scratch it’s not too terrible and this tastes way better than any keto cake recipe I have ever tried. I've been on and off the Keto diet for 2 years pand have lost over 100 lbs. My weakness being anything with sugar in it. This cake satisfies my need for sweets without all of the guilt from thinking I cheated! It has a strong, amazing lemon flavor and texture of a coffee cake without grittiness that you sometimes get with "diet" food. It doesn't rise as high as you would expect and the bottom gets a little dark. Healthier and alternative foods are generally higher anyways so I wasn't surprised by the price. All in all, this is one of my favorite go to cakes for breakfast, lunch, snacks, and Tuesday afternoons on the quad!

OMG. Seriously? These muffins are unbelievable. 🥰 I wasn’t sure whether or not to use muffin liner cups, I’m a novice baker. So I did half in liner cups and half in the greased pan. The ones with liners seem easier/cleaner but both are delicious. A couple of the ones without liners stuck a bit, but maybe I didn’t wait long enough for them to cool, or I waited too long. You know the internet said both could cause that, of course. I also tossed a couple of blueberries into two of them. Yummo! I’m going to have a hard time eating just one. I will be stocking up on this mix!

I have tried many low carb products, from desserts to breads and pastas and this product has been the best by far. Super easy to make, just 4 ingredients, and 25 minutes of your time. During mixing, I got scared because during mixing, the batter felt gritty, so I was worried they would taste like the hundreds of other almond flour based products. This was not the case. I made this at 2100 and by 2120, it's almost gone. They make great cupcakes. Pair with a low-carb lemon icing and these would be perfect. They are very sweet and lemony. I'm docking a star because you can definitely taste the artificial sweetener as it has that mild "artificial" sweetness, for lack of a better phrase.

Bottom line, They're good.So I baked this today and followed the directions exactly, while they cooked the kitchen didnt smell lemony but more like eggy cake if that makes sense so I was a bit skeptical. Then when I took the first bite I was surprised how good they were.Don't get me wrong. They're not the best lemon cake I've ever had, but they ARE the best low carb lemon cake I've ever had. I made mine as muffins. I figured that would beat having to cut them (have you ever cut keto stuff? They usually crumble). And it worked perfectly was able to make 12 regular sized muffins.My only complaints was that I wish the lemon flavor was stronger and of course there's always that sliiiiight little aftertaste. But in this mix it's like barely there.My bf said he can't believe it's keto friendly. So we will be buying these again.

This is one of my two favorite low carb baking mixes from HighKey Snacks (the other is the double chocolate chip muffin & cupcake mix). I use this delicious mix to make keto lemon cupcakes that, in the context of what’s possible within the limitations of keto-friendly baking, are light, tender and flavorful. Even my husband, who loves and eats sugar- and flour-laden cake often, enjoys these! They’re great by themselves, and even better with a sugar free lemon cream cheese frosting.

Not the greatest cookie Ive tastedbut good enough for a no sugar sweet treat. If you are serious about cutting oit sugar then its a good alternative to cookies. Chocolate is the best...then salted caramel...

I've tried many High Key products and never been disappointed, but I think this new lemon cake has taken over first place with my taste buds. The flavor is perfect - very fresh, not fake tasting, with just the right balance, not overdone. The cake was extremely moist, and I was pleasantly surprised with how long it stayed fresh and moist. This is definitely going to become a regular on my High Key shopping list!
