Perhaps naively, I assumed that, when cooked, this spice would be similar to fresh or jarred sofrito. (IE, it would absorb into tomatoes and other liquids while cooking). Alas, it really doesn't.I stewed it in tomatoes for a good hour and it didn't impart the flavor very strongly and retained the dried texture. (Which was quite unpalatable.)I'm hoping that pressure cooking it will yield a better result. As of now, I recommend against it if you're looking for something resembling actual sofrito.
