So aggressive yeast
I haven't seen more aggressive yeast than this one.I used a very popular champagne yeast on my 4 gallon cider, followed all the pitching instructions and added the needed nutrients and four days later nothing happened, and the SG was still the same. So I added this yeast and boom they started working around five hours after I pitched them, and my cider's SG was down from 1060 to 994 in THREE DAYS!! and got even lower in secondary fermentation to 990 after a month.I used it again with cider but this time I pitched it in 7 gallons, added the needed nutrients and they literally started working in a few hours after pitching. The SG got down from 1075 to 994 in three days as well!!!Not sure why it ferments this dry. Next batch I will significantly lower the amount of yeast nutrients because I don't like a very dry cider.The temperature in both batches was a stable 24C 24hours. The yeast tend to sink down nicely leaving the cider clear and clean.I'm new to fermentation and the above two batches were my first batches ever, so lessons learned!

Takes a few days to get going in a large bucket, but once it starts it's unstoppable until it's good and ready. So far, all 8 gallons made have worked beautifully, with the last 6 brewing right now. Won't have a verdict on that batch until October, but the yeast is cooking right along.

Will buy again
This cider yeast made a very clear cider and the alcohol got up to 8.5%. No off taste. Will make again but will use less sugar to get the alcohol a little lower. Will buy again from this company
