Would it fit in an audi saloon boot? Not a hatchback

It is quite big and would fill your boot to 50% at least. I have Berlingo Van another takes up third of the boot space.

Can it be adjusted to have a long compartment for a rolled up yoga mat?

There is compartments you can take out, it should tell you what space is once compartment sections remove. It's very sturdy, and bulky if you want to use for gym items, I'm not so sure as it's not real a bag it's more to store items. For me I use it in my mobility car to stop items sliding around boot, and it has hooks to secure to sides of boot.

Hi can you just confirm the dimensions of this item as in your description it is 74.3 x 36.8 x 31.8 centimetres but in the Photo it is 60 x 37 x 32 cm

Yes, I think the demensions are correct.
