Love it!!!
I have never made nor heard/read about aebleskiver before. This pan showed up in the list of things Amazon thinks I might be interested in, as I was checking out those fancy pancake pans that leave embossed designs on pancakes. Well, the idea of stuffed pancake balls piqued my interest so I bought this pan, preferring it over the "more-bought" Nordicware version after reading reviews about flaking of Nordicware's non-stick material. The first batch I made out of this pancake pan was a bit messy, as I was learning how to turn the pancakes. After that, every batch look nicer than the previous one. And well, it was fun to eat them afterwards! My 4-year-old daughter certainly thinks so. Here's what I did: 1. I heat the pan to low-medium heat. 2. When hot, I wipe the cavities with kitchen towel dipped in oil (I used corn oil). There shouldn't be any oil pooling inside, just sort of very thinly "glazing" the cavities. I do this only at the start of cooking, not for every batch of pancakes. 3. I put 1 tbsp of pancake mixture in every cavity---I used Jemima's buttermilk pancake mix this morning. And even though it says in the box to just add water, I made the pancake mixture with 2 c Jemima buttermilk pancake mix, 1 c whole milk, 2 lightly beaten eggs, and 1 tbsp corn oil. 4. I put the filling---I used like an inch cube of Philadelphia cream cheese this morning, gently pushing it into the cooking pancake mixture. Then, I top each one with like 1/2 tbsp of pancake mix to "seal" the filling inside. 5. I wait till the sides of the pancake start to sort of pull away from the pan's cavities, and gently turn them around using bamboo skewers. I found out that the pointed part of the skewer makes the turning easier. 6. I wait for a little while till I can see from the sides of the pan's cavities that the bottom part of my pancake has set. 7. I check to see if the bottom part is nicely golden brown and then, voila! to the serving dish they go. Nice to eat when these are warm!! Yield: 25 golf-sized balls of cream cheese-filled pancakes---Check out the picture I posted. :) I bought this pan last Nov 7, 2012 and have used it 3 times so far. I think it heats evenly (perfectly fits the larger burner of my electric stove), releases the pancakes easily, and cleaning the pan is very easy as well. I hope the pan will stay in good condition for a long time... let's see (will update my review when the pan's non-stick start to wear out). Happy with my purchase and will recommend this to someone looking for this kind of pan.

Love it!
I hesitated for months before buying this pan because it only does one thing. I don't need more gadgets, but breakfast was getting repetitive and I like to make interesting things for my kids before school. I'm glad I finally relented. The pan makes Ebelskivers simple to make. It takes no time to whip up 21 Ebelskivers and my kids are thrilled. I've filled them with homemade strawberry jam and Nutella and cooked apples and apples and strawberries for a nice fruit filling. I've also made a kind of cheese soufflรฉ. They've all been good. The kids like if I do several fillings and surprise them. I had a lot of trouble deciding on which pan to get. Initially,I ordered a cast iron one, but changed my mind because I thought it would be too heavy and unpleasant to use (I have a glass cooktop). Then I wasn't sure whether to get this one or the Nordic Ware pan. I finally decided on this one which was a few dollars cheaper at the time and had good reviews. I am very satisfied. Nothing sticks and it is so easy to use. It seems to heat up well which was one of my concerns since we have electric and I thought gas might work better with the uneven bottom surface of the pan. I've been using wooden skewers to turn the Ebiskivers and it's fine. Chopsticks might be better but I don't have any. Overall, this has edema great way to enhance breakfasts without any more effort than I was already putting in to make French toast, waffles and pancakes.

So Much Fun and Yummy Too!
I am having a ball with this pan! I'd never made aebleskivers before, or even heard of them until I got a cookbook from a friend for Christmas this year. It had one chapter that mentioned aebleskivers, and they looked so interesting that I just had to try them. I decided on this non-stick pan over the cast iron because these pancakes are often filled, and I thought this one would be easier to clean if any filling escaped during cooking. The pan is of course much lighter than cast iron, but does not feel cheaply made. I tried it for the first time the Sunday after it arrived, and while the first batch was supremely tasty, it took until the third batch for me to really get the hang of it (which is not a bad learning curve when you think about it.) I used it on my GE gas stove and did not have any stability problems whatsoever. It heats up quickly, so you need to keep an eye on it and lower the heat as necessary. I used a medium cookie scoop to fill the wells; a full scoopful will fill each well to the top, but I was filling the aebleskivers with Nutella or strawberry jam, so I used a half-scoop, then a teaspoon or less of filling, and another half-scoop on top. After a couple of minutes, I flipped them over with a wooden chopstick, and let them cook a minute or two more. They came out perfectly! And, as I had hoped, clean-up was a breeze. All it took was a quick wipe with a hot, soapy cloth and a good rinse with hot water, towel dry and done! I'm very happy with my purchase and very glad I finally discovered these tasty little treats.

Great non stick pan, not a fan of the handle.
It's a great non stick pan. I tried it out this morning, making pancake-like balls. My only regret is the plastic handle, which I am concerned would burn if you had it too close to an open flame (which could happen if you have a gas cook top). There is also no way I would put this into the oven with that plastic handle, so it's definitely only a cook top pan. Otherwise! It is excellent non stick material, and the ball size depressions make a great Danish ball pancake, just the right size for eating. I would buy this again over a cast iron version, but maybe only until the handle melts.

Best pancake pan
We were influenced by a neighbor to get one of these and we are in love. We used it three times in the first week we bought it. Easy to use. Easy to clean! So much better than standard pancakes. We even stuffed some with bacon. Some with peanut butter. Some with Nutella and some with chocolate chips. The kids were in heaven! Kind of want a second one.. I do have to say itโs easiest for me to flip them with a spoon. Such a fun buy!

Wonderful pan!
This pan is great. I love how well it cooks my pancake balls. I can fill them or eat them without filling. Cleans easily.

Worked great on glass top electric stove!
My family's Christmas traditions have always included a Christmas Eve meal of Aebleskiver with all the Danish trimmings. My children have been raised with this tradition, and now their children are doing the same. Over the years I have collected cast iron pans for all of my children so that they can continue the traditions. My youngest, a junior In college, has prepared Aebleskiver for his friends at school! My wife just moved to a new home after living in the old house 25+ years. Our Aebleskiver was always made on a gas stove. The new house has a glass top electric stove. I did some research on line and there were many comments saying that one could damage the glass surface on the stove by using cast iron pans. I communicated with the family that our Christmas Eve tradition might have to change. I then searched Amazon and saw the Norpro 3113 pan. Aluminum? Nonstick? From the comments written by other buyers, thy said that it worked well on their glass top electric stoves without causing any damage. Hmmmmmm. What do I have to lose? I ordered 2 pans and they were delivered super fast. When all of the troops arrived, the batter was tripled and prepared like always. My daughter helped me make the Aebleskiver, both pans in action over medium heat with adjustments alone the way. The Aebleskiver came out perfect. We used canola spray on the nonstick surface before refilling each time. These pans do what they say they will do. The cost is minimal and the nonstick is a real treat! Others may have other results, but from a guy who has "flipped and turned" Aebleskiver for 45+ years, these pans saved our family tradition! We will quadruple the recipe next year!!!
