What size are the wheels? Can you buy just the bracket part without the wheel?

The wheels are approximately 4 inches in diameter and come with wheel brakes, which comes in handy. I don't see a good way of separating the wheel from the bracket as each caster assembly is REALLY strong, probably stronger than the metal shelf systems that one might be bolting the caster unit to.

Will they mount to unistruts?

Not and be safe. With some serious modification it may be possible but not sure I would want to trust it.
