Will it work for a 5v power source?

Yes they will work with a 5volt DC power source. The LED's are rated for a maximum of 12volts with the attached resistors and minimum amount of voltage the LED's require to work also called (Forward Voltage) is only 3Volts so you're good. Hope it helps.

Do I need to add resistors if I'm hooking 10 of them up to a fixed 14 volt accessory output on my model train transformer?

The LED's already have resistors soldered onto the hot wire. That's why they are rated for 12V. But if you're going to hook them up to a 14V system you will definitely want to get some more resistors so you're not blowing lights often.

How many lumens does a single one of these LEDs put out?

i do not know but i assure you it will hurt your eyes if you look at them straight on for sure. At night, I can clearly see them reflecting on a wall 8 feet away and I only used 2.
