Kelp noodle
I never write reviews, but these noodles are amazing.. I honestly think the bad reviews are from people who don't know how to prep them. I don't mind my noodles a little crunchy, but If you prefer softer noodles all u need to do is clean & soak with hot water. Its very easy to prep. I think it's best made with soups.

Glass kelp noodles
These noodles are basically the same as cheaper shirataki (konjac) noodles. Same rubbery texture and chewy chewy chewy. And I'm not talking Star Wars here. These didnt soak up the sauce at all, either. (See photos) The things they have going for them is no fishy odor or nasty taste, (they are pretty much tasteless), they are easy to prepare and are low calorie/carb. I feel they are very expensive for what I received. Alot of water weight along with the noodles. These are transparent and try as I might, I cannot get past the rubbery texture when I am craving true pasta. They are very slick and don't want to stay on a fork, however they may work perfect with chopsticks. To summarize, they are tolerable and eventually get chewed. I doubt I buy these again (I got 2 pkgs!). I will consume these though since they are pricey and too expensive for the trash or chickens. Just a note,these do need to be rinsed and then massaged in baking soda/lemon juice water to help separate and then rinsed a final time before consuming. I feel that is essential to know. It's all a matter of taste and if someone is accustomed to these, then of course, they are going to love them. It would just take some getting used to for me. Who knows? Maybe by the time I get through both bags, I will love them, as well! That is several meals down the road so I guess we will see! UPDATE 6/5/26: I am eating some of the leftovers from the stir fry from last night. The noodles are much better! They have a better texture and are not as rubbery. I will be purchasing these again! And changing the star status from 4 to 5 stars! Give them a try! But in my opinion, they are better after being cooked in your stir fry (or whatever you prepare them with) and refrigerate overnight, then consume. So glad I had leftovers to find this out!! I will be getting at least 4 meals out of that one package so this is an excellent buy price-wise as well!

Just No
I really wanted to like these... but I couldn’t. The first problem - the cost is prohibitive. The bag that arrived was surprisingly small. The weight came from the water in which it’s packaged. Second. I tried some straight out of the bag. It was akin to chewing on a tasteless crunchy rubber band. A rather strange texture combination and not a pleasing one. I tried adding some to a salad to see if mixed with a bit of greens and acid and fat it would miraculously become palatable. It didn’t. I tried to cook it - in order to soften it up... after boiling it for 15 minutes it still had the same rubber band texture but was a little less crunchy. Three minutes out of the water I added a little sauce and was quite pleased with myself... until I bit into my dinner, the kelp had cooled down a bit and was crunchy and rubber again. I’m beyond disappointed in this product. Perhaps it is ignorance and this is how folks enjoy it. It would be great for weight loss since a few “noodles” take 5 minutes to chew through.

HOW HAVE I BEEN LIVING WITHOUT THESE?!
These are SO good. I ordered a pack of the konaberry ones as well and they accidentally got left on the porch overnight and froze and they’re all shriveled and dry now so definitely DO NOT freeze them. Back to these: AMAZING. I rinsed and massaged them under some lukewarm water until they were all separated and then threw them right into my vegan cheese sauce. They’re so delicious. The texture is unique but not too far off from el dente rice pasta. And the best part is that they’re almost ZERO calories. 6cal per 1/2cup, I’d say the pack is about 2cups so even if you are the whole thing it’s practically nothing. The only downside is how expensive they are. But if you’re vegan/raw vegan and you’re someone who loves and misses pasta, these are worth splurging on!

When you need noodles but are on a diet
After being on a diet all summer I was really missing noodles and found these by looking up low-calorie alternatives. They come in a shelf-stable bag. There are instructions about how to prepare the noodles, where you separate them in cold water with lemon juice and baking soda, then rinse them. Then they are ready to warm up and eat. This adds a step to cooking and some thinking ahead but only takes a couple minutes and isn’t difficult in itself. The noodles have effectively no flavor. They are glassy and really don’t soak up any sauce. At the same time, they don’t soak up water either, so won’t become mushy even if they sit in water for days. This bag is enough for two big servings. What constitutes a serving is really just a matter of how much physical volume you want to eat, because the noodles are so low calorie, eating one noodle or the whole bag is a trivial difference. These are WAY better than nothing. That might sound like faint praise but it isn’t. They are also way better than zucchini noodles. They’re more expensive and not as tasty as rice or wheat noodles. These are great if every calorie matters and you want that noodle component in a dish.
