Q: Is this pan 100 % food grade silicone so that when you fold it there is no white in the crease?

The best I can tell you is that no matter how I fold and mangle this pan, I see no white and it returns to its original shape no worse for wear. I have no knowledge of the manufacturing to be able to state 100% food grade. I have used it quite a bit with no noticeable impact on the food or change in color of the pan.

Q: Is this microwave safe?

I wouldn't use it in the microwave. I'm sure the silicone would be fine, but it has a heavy metal rim, and metal doesn't belong in the microwave.

I don't usually go around pinching my bread pans so I don't know about that.(LOL!!) I DO know it is a really nice bread pan and your bread pops right out without sticking. I love this pan, it's the best one I have ever used.
