What does this taste like?

It really does not taste like anything

What is the mouthfeel like with this product? I see that it creates foam on the top, but egg whites change the whole cocktail, to have a creamy textur

It does produce a great foam, but the mouthfeel isn't _quite_ like an egg white. On the other hand, it's a lot better than aquafaba. You might want to check out Frothee. I think that's a little better product and the bottle you get lasts forever.
