Q: How much psi will the pump create?

It can vacuum seal canning jars, I pump it to 20-25psi, but it can go much further, not sure how far, but 25 will seal a jar very well. I vacuum sealed shelled pecans in a glass quart canning jar and put them in the freezer. I also put a jar of shelled pecans in the freezer without vacuum sealing the jar. 4 years later the vacuum sealed pecans were fresh and delicious, but the non-vacuum sealed jar was rancid.

Q: Approx how many pumps and how long to vacuum seal a 16oz ball jar? I already have a jar seal adapter.

I watch the pumps vacuum needle and wait till I see the gauge reach 10-12 vacuum. I sealed quart and pint jars years ago and they are still sealed up tight. Just make sure that you hold some pressure down on the ADAPTER as you start the vacuuming process. Some of the jars I placed little packets of moisture absorbers. Also make sure the rim of the jars don't have any chips.

No it doesn’t come with a case.

Q: Would this work with a 3 gallon vacuum chamber, and eventually reduce the pressure to around 20 microns, given enough time and effort?

with enough effort and time it could get to the desired vacuum level but an electric vacuum pump would perform the task much more efficiently.
