Great knife - very sharp.
So I used a Shun Ken Onion Chef Knife for about 15 years and a Zwilling Santoku Chef Knife for about 25 years but felt that I should “semi-retire” those knives.I looked for an everyday kitchen chef knife. I went for the Züm line, because I like a bit more fancy handles.The knife came sharper from Amazon than my knives are when I freshly sharpen them (Worksharp Ken Onion). Kudos for that.The Blade is slightly longer than my two other knives. Nice.The handle is nice and the knife is well balanced (other than especially the Zwilling which is quite handle-heavy).So - all good.But, there is something which I cannot put my finger on. It is not enough not to use it or to say, that it isn’t great. But it also isn’t that I fall in love with it as much as with the other two knives.Maybe the biggest “gripe” I have is the overall finishing of the blade (which is good enough - but with the premium you pay for the Züm, it should be far better than the “normal Mercers” - and it isn’t).I think Mercer should go back to the sketch board and should change their strategy. At this point the Züm seems like a “cash grab” - using the excellent reputation the company have and make a knife with a fancy handle - mark it up and call it a day. I probably would pay slightly more and have a knife which makes me more happy...
