Can these be mounted on a metal door? I assume sheet metal screws would be required. What size?

I mounted it on an aluminum door and it worked great I use number 10/32 machine screws but sheet metal screws would work if you don’t have access to the backside

What is the diameter of the pin?

The pin is exactly 10 mm thick which is approximately 3/8", not 5/16" as another answer gave.

What is the distance the pin extends from the latch body on the 5", 6" and 8"?

On mine the pin over all length is 5". In the latched position the end of the pin is 1-5/8" from body.
