It is one of the "three sisters" (together with beans and squash) among early Native American civilizations' principal food crops. Polenta has been prepared since the time of the Romans. Before the New World introduced grain to Europe in the 16th century. Polenta Maize Meal is a dried maize meal crushed into a meal. It's a typical basic meal that comes in medium and coarse grinds but is not as fine as wheat flour.
