Yes there is an aluminum side and I white side. I use it with the aluminum side down next to food and I write on the white side, as I use them to freezer meals

Q: Are they large enough for jumbo turkey legs?

I don't think so, at least not if you intend to keep the whole bone. They are probably big enough for the actual meat on the bone, but I think you'd have to cut the bone to get them into the pan. They do have a bigger capacity than you might think just not the length for what you want to do.
