Can I make Gnocchi with this 00 flour?

Our "00" flour was specifically formulated to work best with pizza doughs as it does have a protein level around 11.5% and is a blend of hard and soft wheats. How many 3 lb bags for $29.18?

That is what the add says. But I only got one bag.

Can the flour be placed in the freezer in the resealable bag or should it be transferred to another container?
